New to the Menu: Freddy’s Frozen Custard & Steakburgers

Freddy’s has two new limited-time offers this spring: the Spicy Chicken Sandwich and the Peanut Butter Crunch Concrete made with Snickers®! Both items are available at Freddy’s on Killian Rd. and will remain on the menu through mid-June or while supplies last. The Spicy Chicken Sandwich is a tender chicken breast filet with a cayenne pepper kick, cooked to a crispy golden brown and topped with crunchy pickles, all on a toasted bun. The Peanut Butter Crunch Concrete blends fresh and creamy vanilla frozen custard with Snickers® candy bar pieces, roasted peanuts, peanut butter, whipped cream and garnished with even more Snickers® pieces. Weekday Therapy: Grill Marks

img_2059On a recent December weekday after work, with temperatures dipping, the Gardener Guides team, cold and hungry, was in search of some comfort before the holidays. We headed over to see if the good people at Grill Marks could help us out.

We were immediately excited to see a cozy area with soft lighting, great decor and a fireplace, and placed our drink order. Grill Marks’ bar offers a huge selection of wines, “Now” craft beers and scratch-made cocktails, as well as a range of ice cream concoctions such as Floats, Milkshakes, Freakshakes, and alcoholic-infused Spiked Floats, Shaketails and Beer Shakes. Unfortunately, we were just too chilly to try those, but will definitely be back for them once the weather warms!

Food requests from the team ranged from burgers, for which Grill Marks is famous, to any of their potato offerings, of which there are many: Skinny Fries, Fat Fries, Sweet Potato Fries, White Truffle Parmesan Fries, Bleu & Pimento Cheese Fries, as well as White Truffle Parmesan Chips and Bacon and Bleu Chips w/Cracked Pepper. The decision was difficult,img_2062 but we settled on the Slider Trio which included a Pimento & Bleu Cheese slider, Crimini & Swiss slider and Jalapeno & Pepper-Jack slider. We also ordered the Marks Pimento Cheese Poppers, and for the pick-3 appetizer option chose White Truffle Parmesan Chips with Dijonnaise dipping sauce, Fried Green Tomatoes with Chipotle Ranch and Sweet Potato Fries with Orange Cinnamon sauce.

We can report that the rumors are true; Grill Marks’ burgers really are incredible! Everything from the degree of doneness of the fresh, custom blended burger patties to the buns (each one baked daily and individually branded) to the toppings, were superior. In fact, our only regret was that we hadn’t ordered our sliders off of the Happy Hour menu, as they would have been a tad larger and therefore led to less infighting among the gals, but, live and learn! The other appetizers were wonderful as well, and really brought up a notch with the housemade dipping sauces that came alongside.

At the end of the hour we were ready to venture back out into the cold streets of the Vista with the knowledge that we’d found a real gem of a Happy Hour venue, one that we could count on to provide us with the atmosphere, food and drink that makes for the best kind of Weekday Therapy!

Shared Recipe: Potatoes O’Brien

My Grammy Rice found this recipe a long time ago and my family has been enjoying it ever since, as it’s our favorite potato side dish. Because my love for fellow Foodies runs deep…enjoy!

Pre-heat your oven to 360 degrees.

Mix in a large bowl:

  • 1 frozen bag of Ore-Ida O’Brien Potatoes
  • 1 can Campbell’s celery soup
  • ½ cup of milk
  • ½ cup of sour cream
  • ½ cup of shredded cheese
  • ½ cup of French’s Fried Onion Rings
  • Season with a sprinkle of black pepper and salt

Mix well and place mixture in a 9×13 pan (glass works really well)

  • Not mixed in, but set aside an additional ½ cup of shredded cheese and a ½ cup of French’s Fried Onion Rings for toppings.

Bake covered (works covered with Alum foil shiny side down) at 360 for 60 minutes (until center is cooked through).

Uncover, and top the potatoes with the ½ cup of French’s Fried Onion Rings and then top with the ½ cup of shredded cheese.

Cook uncovered at 350 for an additional 10 minutes to melt the cheese.

Tips from my dad (who makes this recipe often):

I would not double up on the recipe because it might not cook all the way in the middle, while the edges will overcook. It is better to make two pans if you need a double recipe.

If you want a meat with the dish, it works really well with thin pork chops (not those monster thick ones). Brown both sides of the pork chops in a skillet with butter.  Line them on top of the Potatoes mixture in the 9 x 13 pan before cooking them for the 60 minutes. Everything else is the same.

My dad’s shortcut::

Mix in microwavable bowl, microwave for 10 minutes on 50% power, mix again, microwave again for 10 minutes on 50% power while preheating oven to 350 during the last 10 minute microwave round.

After the two microwave rounds, spread the mixture into a 9” x 13” pan, cover with the ½ cup of onions then cover with the ½ cup of cheese, melt in the oven for about 5 minutes, longer if you want to brown the onion/cheese layer.  This gets you a casserole in 25 minutes instead of 65 minutes. I do it all the time and folks love it either way!

NewsFlash: City Roots Launches Farmers Market!

This Thursday City Roots launches their own Farmers MarketCity Roots Farmers Market

Located at 1005 Airport Blvd., City Roots Farm will host a farmers market every Thursday from 4pm – 7pm on-site. This Thursday – October 20th will be the first Thursday it is opened, so don’t miss it! The market will feature a selection of local products: fresh, organic produce grown at City Roots’ farm, pasture-raised pork, lamb and poultry, free range eggs, artisan breads, organic maize products, fresh milk and butter, cheese, honey and a selection of craft beer and wine. Each week, Farm to Table Event Company will prepare seasonal, farm-driven food for purchase, and they’ll offer tastings, live acoustic music and a farm tour at each market. On Oct. 20, enjoy music by the Tom Hall and the Plow Brothers!

City Roots has partnered with other local, sustainable farmers to offer a fun, alternative shopping experience, as well as the chance to get to know the farmers and producers responsible for your food. The market is designed to be a one-stop shop for locally-sourced, CSA-driven meals, in a relaxed farm environment.

News Flash: Vote For Grill Marks

We’re proud of our city and its awesome growth the past few years, right?  We have some fantastic restaurants here in Soda City, and it would be great for the world to recognize Columbia for something other than Confederate flags and historic floods.  Well, here’s our chance! Grill Marks (in the Vista) has an awesome burger entered in the James Beard Foundation’s Blended Burger Project, which brings awareness to crafting a healthier burger & is dedicated to exploring the ways that food enriches our lives. So please vote for Grill Marks here!  The project brings awareness to making a healthier burger, so Grill Marks has blended shiitake mushrooms, basil and garlic with their dry-aged, DeBragga Certified Angus Beef, making a burger that’s 35% less calories and 40% less fat than a normal burger patty.

You Have to Try This Place: Moriarty’s Irish Pub

When James Pickle (great name for a restaurant proprietor!) met with his chef, Devin Maes, to develop a menu for the all new Moriarty’s Irish Pub, he told Devin that one of his top priorities was serving Moriarty’s patrons the BEST BURGERS in Columbia.  That’s a tall order in a town known for great burgers.  Undaunted, Devin worked tirelessly, putting his years of experience to the test.  An amazing burger was born  – a unique blend of high Moriarity's Burgerquality beef brisket and short rib, combined with a signature blend of smoked peppers, coriander, mustard seed and roasted peppercorns (daily roasted in house!) grilled over an open flame. Placed on artisan brioche buns, brushed with house-made infusions of oregano oil, basil oil, rosemary oil or garlic oil (depending on type of burger ordered) and grilled.  Fresh lettuce and ripe tomatoes, lager-drenched red onions and your choice of 6 different house-made sauces.  The restaurant even makes its own burger pickles, using homemade sweet and spicy vinegar (the menu calls them “quick-pickled sriracha cucumbers”).  Burger variations available with awesome toppings include The Smuggler (topped with diced tomatillos and poblanos, swiss cheese, and a honey jalapeno sauce) and The Fully Loaded Paddy Wagon (with topping choices that include a fried egg, a crunchy onion ring, jalapenos, bacon, salsa and tabasco).

In addition to serving excellent burgers, they also have a varied menu that includes Appetizers, Salads and Sandwiches.  One unique category: Gaelic Fare including Isle favorites like Gaelic and Guiness Stew,  Cottage Pie, Highland Poached then Grilled Bangers and Mash, and the like.  Like the burgers, everything is made-from-scratch, in-house (including their Corned Beef!) Moriarity's Bar

Their pricing is reasonable and we found that, the both times we tried it, the service was outstanding.
