Are you a fan of Callie’s Hot Little Biscuits? Have you had one of these delectable melt-in-your-mouth Charleston delights? Do you like cooking, baking and restaurant TV shows? Then you’ll be thrilled to know that “How She Rolls“ is a new 10-part series created for PBS by SCETV. It is in production now, and has been since February, 2020. The show follows Carrie Morey, Callie’s Hot Little Biscuit owner and amazing entrepreneur.
Recently the SCETV Endowment aired a Zoom presentation with the new show’s production people and Carrie, from Carrie’s home kitchen in Charleston. I hadn’t seen Carrie before, but she has a wonderful presence on-camera and I believe she’ll be as popular as Vivian from “A Chef’s Life“. Carrie and her husband have 3 daughters, and the show examines how she runs her biscuit business (including a huge online-order business, retail locations in Charleston (2), Charlotte and Atlanta and a new food truck), is home each afternoon to cook dinner for her family (can you believe that?) and takes care of everything in-between, including writing cookbooks and going on national TV shows to do interviews… and dealing with the pressures brought on by COVID-19.
Watching this sneak peek from the SCETV Endowment, I learned that Carrie uses only White Lily Self-Rising flour in her biscuits and milk from South Carolina’s own Hickory Hill Milk . Her favorite biscuit is buttermilk (she’d already eaten three of them today!) Interestingly, one of the company’s products is biscuit crackers which are made from the biscuit-dough cuttings from around the biscuits when in production. Bakery staff only roll their dough twice, and the leftover dough is rolled thin and turned into biscuit crackers.
I am really looking forward to seeing “How She Rolls” next spring, when it is anticipated that it will begin to air. In the meantime, Carrie shares some favorite recipes on her website for baking, roasting, stovetop, side dishes and more… or maybe you should do like me, just order you some biscuits! https://calliesbiscuits.com/
